5 Spot Banana Pancakes

¾ cup flour
6 Tbs. whole-wheat flour
1 ¼ tsp. baking powder
¾ tsp. baking soda
1 ½ tsp. sugar
¼ tsp. salt
1 large egg
1 ½ cups buttermilk
3 Tbs. butter, melted
2 ripe bananas, sliced

Whisk eggs, buttermilk and butter. Add dry ingredients. Stir until batter is evenly moistened. Ladle ¼ cup batter at a time onto a lightly buttered medium-hot (350°) griddle. Scatter 3-5 banana slices onto each pancake and cook until edges of cake look dry (3-4min). Turn & cook other side

Sticky Buns

18-22 Rhodes rolls
1 cup butter, melted
Sm. cook & serve butterscotch pudding
¾ cup brown sugar
1 tsp. cinnamon

Pour half of pudding powder in the bottom of greased 9x13 pan. Add rolls. Mix butter, brown sugar, cinnamon and pudding. Pour over top of rolls. Place saran wrap over pan and let rise for 6-8 hours. Bake at 350° for 25-30 minutes.

Cranberry Bread

2 cups (1/2 lb) Cranberries
1 tsp. grated orange rind
2 cups flour
1 cup + 2 Tbs. sugar
1 ¾ tsp. baking powder
1 tsp. salt
½ tsp. baking soda
1 egg – beaten
1/3 cup orange juice
¼ cup water
2 Tbs. melted butter
¾ cup chopped nuts

Rinse berries and cut them in 1/2. Sprinkle with orange rind and set aside. Mix dry ingredients. Stir juice, water and melted butter into beaten egg. Pour mix in dry ingredients. Blend on low until well mixed. Fold in cranberries and chopped nuts. Bake in greased & floured loaf pans at 350° for 70 minutes. Wrap in foil and store in refrigerator.

Monkey Bread

2 cups warm water
1 Tbs. yeast
½ c. sugar
1 Tbs. yeast
3 c. flour
2 eggs, beaten
4 Tbs. oil
4 – 4 ½ c. flour
1 cube butter

Dissolve yeast in water. Add sugar and salt. Add 3 cups flour and mix well. Add beaten eggs and mix well. Add oil and 4-4 ½ c. flour – it will be a sticky dough. Cover and rise until doubled. Stir down and rise again. Melt 1 cube butter, put ½ in each bundt pan. Roll out ½ dough to ½”-1/3”. Cut 15 pieces into 2” rounds. Place upright like wheels in bundt pan. Rise 3-4 hours. Bake at 400° for 15-20 minutes.

Apple Waffles

1 cup applesauce
2 cups pancake mix
2 eggs
1 cup milk
1 tsp. cinnamon
¾ cup brown sugar
½ cup oil

Belgian Waffles

2 cups milk, luke warm
1 Tbs. yeast
4 eggs, separate
1 tsp. vanilla
2 ½ cups flour
½ tsp. salt
1 Tbs. sugar
½ cup melted butter

Beat the egg whites until stiff, and set aside. Mix other ingredients, and then fold in the egg whites.

Bread Pudding

6 cups milk
4 eggs
1 tsp. vanilla
¼ tsp. salt
1 ½ cups sugar
Bakery French bread
Cinnamon
Nutmeg

Mix milk, eggs, vanilla, salt & sugar. Spray 9x13 with pan, then line with cubed bread. Pour egg mixture over bread. Sprinkle lightly with nutmeg, and generously with cinnamon. Bake at 350° for 40-45 minutes.

Ruffins

1 cup flour
½ cup sugar
2 tsp. baking powder
½ tsp salt
1 cup cracked wheat
¼ cup oil
1 cup milk
1 egg

Mix flour, sugar, baking powder, salt and wheat. Then add the oil, milk and egg. Bake in muffin tins at 400° for 15 minutes

Corn Bread

1 ½ cup cornmeal
2 Tbs. flour
1 egg
3 Tbs. oil
1 tsp. soda
¼ tsp. baking powder
1 tsp. salt
1 ½ cup buttermilk

Bake at 425° for 20 minutes.

Julie Stauffer's Rolls

3 c. milk – scalded
2 tsp. salt
1/3 c. sugar
½ c. butter
2 eggs beaten
8 c. flour
2 pkg. yeast (2 Tbs.)
½ c. warm water

Scald milk, add salt, sugar and butter. Let cool, add beaten eggs. Add 4 cups flour, mix well. Dissolve yeast in water and add to batter. Mix well, add 4 more cups flour. Cover and let rise 1 ½ hour. Roll out and raise another 1 ½ hour. Bake at 350° for 16-18 minutes.

Banana Nut Bread - Larson's

½ cup shortening
1 cup sugar
3 eggs
2 ½ cups flour
1 1/8 tsp. baking soda
1 ¾ tsp. cream of tarter
¾ tsp. salt
1 ½ cup mashed bananas
Nuts – Optional

Mix ingredients and spoon into greased small loaf pans. Bake at 325° for 45 minutes to an hour. Run knife along sides of pan when removed from oven. Wait a few minutes to remove loaves from pans.

Cinnamon Rolls

2 Tbs. yeast
1 ¼ cup warm water
½ cup sugar
½ cup shortening
3 eggs – beaten
2 tsp. salt
4 ½ cup flour
1 cube butter, melted
Cinnamon
Brown sugar
Nuts, Raisins - optional

Dissolve yeast in warm water. Add sugar, shortening, salt and eggs. Add flour a little at a time. Mix well. Cover with damp cloth (or large Tupperware bowl, sealed tight) and place in fridge overnight. 3 ½ hours before time to serve, take out dough and roll out into rectangle. Spread with 1 cube melted butter, brown sugar and cinnamon (nuts and raisins optional). Roll up and cut. Place on ungreased cookie sheet. Bake at 375° for 15-20 minutes.

Buttermilk Spice Muffins - Mimi's Cafe

Muffins:
1 cup sugar
1/2 cup butter
3 eggs
2 ½ cups flour
2 tsp. baking soda
1 tsp. cinnamon
¾ cup + 1 Tbs. Buttermilk

Nut Topping:
½ cup sugar
1 cup walnuts, chopped
½ tsp. cinnamon
½ tsp. nutmeg

Mix butter and sugar, then add eggs and beat. Add dry ingredients. Alternate adding flour and buttermilk to mix, stir at low speed until smooth. Grease muffin tins, fill ¾ full with batter. Add a rounded tablespoon of nut topping to each muffin. Bake at 375° for 20-25 minutes until golden brown and a toothpick inserted comes out dry.

Waffles

2 cups bisquick mix
1 egg
½ cup oil
1 ½ cup club soda

Buttermilk Pancakes

1 egg
1 cup buttermilk
2 Tbs. butter – melted
1 cup flour
1 tsp. baking powder
½ tsp. baking soda
1 Tbs. sugar
½ tsp. salt

Mix well and cook over med-high heat.

Mom's Banana Bread

½ cup butter/shortening
1 cup sugar
2 eggs, beaten
3 mashed bananas
¼ tsp. salt
2 cups flour
1 tsp. baking soda
3 tsp. baking powder
1 tsp. lemon juice
1 cup walnuts

Bake at 350° for 1 hour.

Moist Banana Bread

½ cup butter
1 ½ cups sugar
2 eggs
½ cup milk
1 cup mashed banana
2 cups flour
½ tsp. baking soda
¼ tsp. salt
¼ tsp. salt
1 tsp. vanilla

Bake at 350° for 1 hour.

Whole Wheat Pancakes

1 ½ cup white flour
1 ½ cup wheat flour
1/3 cup sugar
3 cups buttermilk
4 eggs - beaten
2 tsp. baking powder
2 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
6 Tbs. melted butter

Mix dry ingredients. When ready to serve, add buttermilk, eggs and butter. Cook over med-high heat.

Hootenanny's

6 eggs
1 cup flour
1 cup milk
1/8 tsp. salt
1 cube real butter

Preheat oven to 400°. Melt cube of butter in 9x13 Pyrex. While butter is melting, blend all ingredients in blender until whipped. Pour into melted butter in pan. Bake until sides are puffed up and golden brown (10-15 min). Cut into square and serve with powdered sugar and syrup.

Applesause Muffins

2 cups flour
½ cup shortening
1 Tbs. baking powder
½ tsp. salt
1 cup sugar
2 eggs beaten
1 cup applesauce
1 cup chopped nuts (opt)

Cut shortening into flour with pastry blender. Barely blend in all other ingredients (too much stirring makes them tough). Spoon into greased muffin tins. Top with streusel topping. Bake at 375° for 20-25 minutes.

Streusel Topping for Muffins

1/3 cup sugar
½ cup flour
(may use brown sugar)
¼ cups butter or shortening
1 tsp. cinnamon

Cut butter into flour with pastry blender. Add sugar and cinnamon. Sprinkle over the tops of muffins.

Date Muffins

1 lb. pitted, chopped dates
2 cups boiling water
2 ¼ cups sugar
1 1/8 tsp. baking soda
1 1/8 tsp. salt
1 1/8 tsp. baking powder
3 eggs
3 cups flour
1 tsp. vanilla
1 cup chopped nuts (opt)

Pour water over dates in blender. Blend until smooth. Pour into mixing bowl and add other ingredients in order. Stir until smooth. Bake in muffin tins sprayed with Pam at 350° for 15-20 minutes.

Zucchini Bread

3 cups flour
1 tsp. baking soda
¼ tsp. baking powder
3 tsp. cinnamon
1 tsp. salt
3 eggs – beaten fluffy
2 cups sugar
1 cup oil
2 tsp. vanilla
2 cups grated zucchini

Mix all ingredients and pour into small load pans that have been sprayed with cooking spray. Bake at 325° for 50 minutes. Can make this with applesauce and extra zucchini instead of oil to make less fattening.

Famous White Bread

2 Tbs. (pkg) yeast
2 cups warm water
4 Tbs. sugar
2 cups scalded milk
5 Tbs. shortening
4 tsp. salt
12 cups flour

Sprinkle yeast over warm water. Add 1 Tbs. of the sugar. Set aside while scalding the milk. Stir in sugar salt and shortening into scalded milk. When cool enough, stir in the eggs, and add mixture to yeast. Stir in flour slowly. Let rise until double. Mix again and divide dough into 3. Shape dough into loaves. Place in greased loaf pan and let rise until double. Bake at 400° for 30 minutes.

Soapaipillas (Scones)

1 Tbs. (pkg) yeast
¼ c. warm water
2 Tbs. sugar
1 ½ tsp. salt
1 tsp. baking powder
1 Tbs. shortening
1 ½ c. scalded milk
4 c. flour
Oil for frying
Powdered Sugar

Dissolve yeast in warm water. Let stand for 5 min. Add scalded (lukewarm) milk to yeast. Add rest of ingredients. Mix well. Roll out to ¼ inch thick and cut in 3” squares. Let rise 10 min. Fry in HOT oil (370°- 400°). Sprinkle with powdered sugar and serve with honey butter.

Marilyn's Breadsticks

1 ½ cup warm water
1 Tbs. yeast
2 Tbs. sugar
3 ½ cup flour
1 tsp. salt
1 cube real butter - melted

Toppings:
Garlic powder & parmesan OR
Salad supreme seasoning

Dissolve yeast in warm water then add other ingredients. Knead 3 min. If too sticky, add a little more flour. Let rise once, beat down, and then roll out to 1/2” thick. Cut into ¾ inch strips and twist 2 together. Dip into melted butter and place on cookie sheet. Sprinkle with garlic powder and parmesan cheese OR salad supreme seasoning. Bake at 375° for 12-15 minutes.

Grandma's Butter Rolls

2 Tbs. yeast
1 cup warm water
2 cups scalded milk
1/3 cup sugar
1 cube butter
2 tsp. salt
2 eggs – beaten
6-7 cups flour

Dissolve yeast in warm water, add about 1 Tbs of the sugar and let it sit while measuring milk and scalding. When milk is scalded, add butter, sugar and salt to milk. When cooled, add eggs. Pour into yeast mixture. Add flour a little at a time. Let rise once. Beat down. Roll out onto floured surface, cut or shape rolls. Let rise approx. 1 hour. Bake at 400° for 10-12 minutes. Brush tops with butter.
